Ingredients
- canned black beans, drained and rinsed
- frozen corn
- Canned diced tomatoes
- canned green chiles
- ground cumin
- salt & pepper
- chicken breast (about 1 breast per person)
- shredded Mexican cheese
Instructions
- Cut chicken into bite size pieces
- Add to cast iron pot: chicken breast, black beans, corn, tomatoes, and chilis. Sprinkle with cumin, salt, and pepper to taste. Mix ingredients. (Note: I was making this in individual foil packets until I got my cast iron pot. Now, I make all my “foil” dishes in it. It’s soooo much easier than trying to keep the foil packets from leaking and hoping it’s cooked to perfection without actually being able to take a peek.)
- Place pot on grill/fire.
- Cook until the chicken is cooked through, about 30 minutes, stirring about every 15 minutes.
- Remove from heat and transfer to plates.
- Top with shredded cheese and enjoy!
