Shrimp Boil in Foil!

INGREDIENTS:

  • frozen shrimp, peeled and deveined
  • andouille sausage, sliced
  • 1 ear corn per person, cut crosswise into chunks
  • baby red potatoes, cut into bite size pieces
  • olive oil
  • cajun seasoning
  • salt & pepper

DIRECTIONS:

  • Cut one sheet of foil per person and place over a soup bowl.  Form the foil into the shape of the bowl.  This makes it easier to add contents.
  • Place into each bowl a serving of shrimp, sausage, corn, and potato.
  • Add a drizzle of olive oil and sprinkle with cajun seasoning, salt, and pepper, to taste.  Mix gently to combine.
  • Fold up the sides of the foil, sealing the packets tightly closed.
  • Place foil packets on the grill until cooked through, about 30 minutes, turning after 15 minutes.
  • Open packets carefully and transfer contents into bowl or plate.
