So, after cooking a big breakfast on the griddle and before cooking a big dinner over the fire, we generally want a fuss-free lunch. Sandwiches are fine, but we have found bagged salads are wonderful! They come in so many varieties now and even include a dressing packet, so it makes lunch a cinch! Easy to pack and easy to make. Sometimes we’ll bring shredded cooked chicken, chicken salad or tuna salad, or boiled eggs to add some protein.
A light salad with a little protein is very satisfying in the middle of the day without being too filling when were likely busy with activities and don’t want to take time for a big lunch.
