Easy Oatmeal Jars

This is also known as Overnight Oats or Summer Porridge.  While I really enjoy cooking eggs and bacon on my griddle outside, we have found that a simple breakfast is best for the last morning.  There is no need to make a big mess when we’re trying to pack up.  These are easy to throw together before our trip and keep several days in the fridge.  They keep even longer if you have a vacuum sealer and the jar attachment.  Plus, you can add a variety of ingredients, so everyone is happy!

  • 1/4 Cup Old Fashioned Rolled Oats, uncooked
  • 1/4 Cup Vanilla or Greek Yogurt
  • 1/3 Cup Almond or Coconut milk
  • 2 tsp Chia Seeds

Put all the ingredients in a pint size mason jar, mix or shake, then refrigerate for at least 4 hours.  Try some of these flavors or experiment for yourself:

  • Bananas & Peanut Butter (my favorite)
  • Bananas & Chocolate Chips (or cocoa powder)
  • Diced Apple, Chopped Pecans, Cinnamon
  • Fresh Blueberries, Strawberries, and/or Raspberries
  • Fresh Peaches or Mango
  • Fruit preserves
  • Dried Coconut & Chocolate Chips or Pineapple
  • Use Maple Syrup or Honey to sweeten, if you like!
