This is one of our favorites! Wait, maybe they all are. 🙂 Really yummy combination of sweet & hot.
Ingredients:
- Chicken Breast – cut into bite size chunks (about 1 breast per serving)
- Fresh Pineapple – cut into chunks
- Red & Green Pepper – sliced
- Sweet Onion – sliced
- Pineapple Marmelade – about a Tablespoon per serving
- Brown Sugar – about a teaspoon per serving
- Soy Sauce – about a teaspoon per serving
- Red Pepper Flakes – a dash per serving
Put all the ingredients in a cast iron pot. Cook about 30 minutes, stirring every 15 minutes.
