Bacon & Eggs!

Our “go-to” breakfast!  We could eat this every day while camping and not tire of it.  I have a non-stick electric griddle that we setup outside.  It helps keep the camper’s kitchen clean and drives the neighbors absolutely crazy with the smell of bacon in the air!!!

  • Cook the bacon on the griddle, set aside, reserving the fat.
  • If you want a starch, you can toast some rolls, bread, or english muffins in some of the bacon fat (or butter).  You can use these to make egg sandwiches, too.
  • Cook the eggs (scrambled or fried) in a little of the remaining bacon fat.
  • Serve with cut-up fresh fruit, juice, and coffee.  Sit outside and watch the neighbors salivate! 🙂
